Easy Mexican Layered Dip

With all of the parties this holiday season, I thought I would share my easy Mexican layered dip.  I took this to my husband’s company Christmas Party this year and everyone loved it!

Ingredients:

  • 1 can of refried beans
  • Salsa or Picante Sauce
  • Dean’s Zesty Avocado Dip (Make sure and get this brand, it is so good!)
  • Shredded Cheddar Cheese
  • Chopped Green Onions
  • Black Olives
  • 1 Packet of Taco Seasoning
  • Sour Cream
  • Jalapenos (optional)
  • 1 tomato diced (optional)

This is really easy.  All you have to do is layer the ingredients in a deep dish.  Use you best judgement on the amounts of each ingredient based on your dish size.  First, cover the bottom of the dish with the refried beans.  Next mix the sour cream and the taco seasoning in a separate bowl, then layer it on top of the beans.  For the glass dish below, I used 4 oz of sour cream and I only used 1/2 of the seasoning packet.  The next layer is the avocado dip, then add a layer of salsa or picante sauce.  Add the black olives.  I put a lot of black olives (1 small can) because I love them but you can just sprinkle them on as you see fit.  If you are going to add jalapenos, then I would add them after the olives.  The final layer is the cheese.  Add as much or as little as you would like, then top with chopped green onions and diced tomatoes.  I think the diced tomatoes make the dish prettier and really add to the flavor (not shown below).  You can eat it now but I usually chill it for a couple of hours.  It seems to be better that way.
